Creamy Chicken Tortellini Soup Pesto

Creamy Chicken Tortellini Soup


  • 1 tablespoon DeLallo Extra Virign Olive Oil
  • 1 large sweet onion, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 cups sliced carrots
  • 4 garlic cloves, minced
  • 1 1/4 pounds boneless skinless chicken breast (2 large breasts)
  • 9 cups chicken broth
  • 8.8 ounce package DeLallo Three Cheese Tortellini
  • 1/4 – 1/3 cup heavy cream
  • 2 tablespoons packed frozen spinach (1/2 cup fresh baby spinach leaves)
  • 2 tablespoons fresh chopped parsley
  • 1 1/2 teaspoons dried thyme leaves (1 tablespoon fresh thyme leaves)
  • 1/2 teaspoon crushed red pepper
  • Salt and pepper


  1. Place a large sauce pot over medium heat. Add the olive oil and chopped onions. Saute for 3 minutes to soften. Then add the chopped bell pepper, carrots, and garlic. Saute another 3 minutes.
  2. Add whole chicken breasts, chicken broth, dried thyme, crushed red pepper, 1 teaspoon salt, and 1/4 teaspoon ground black pepper to the pot. Bring to a simmer. Lower the heat a little and simmer 15 minutes, until the chicken in cooked through. Remove the chicken and place on a cutting board.
  3. Turn the heat back to medium. With the broth still simmering, stir in the DeLallo Three Cheese Tortellini. Stir well so it doesn’t stick together. Then chop or shred the chicken and place back in the soup.
  4. Once the tortellini is cooked through, about 10-14 minutes, turn off the heat. Stir in 1/4 cup heavy cream, spinach, and parsley. Add a little more cream if desired. Taste, then salt and pepper as needed.

Green Goddess Sandwiches


Green Goddess Mayonnaise (makes enough for 4-6 sandwiches):

  • 1/3 cup packed basil leaves
  • 1/3 cup packed tarragon leaves
  • 1/3 cup packed chopped chives
  • 2 medium-large garlic cloves
  • 2 anchovy fillets
  • zest and juice of 1/2 a lemon
  • 1/4 teaspoon salt
  • 1/2 cup good mayonnaise (such as Spectrum’s olive oil mayonnaise)

Pickled spring onions (makes enough for 4-6 sandwiches):

  • 2 spring onions, bulb thinly sliced
  • 1/2 cup white wine vinegar
  • 2 teaspoons sugar
  • 1 teaspoon fine sea salt
  • 1/4 teaspoon black peppercorns, lightly crushed

Per sandwich:

  • 2 slices pan bread (I like something with a neutral flavor such as Josie Baker’s Wonderbread)
  • 1/2 a small, ripe avocado, sliced
  • 2 fat slices fresh mozzarella
  • 1 medium-sized green zebra tomato (or other heirloom tomato), sliced
  • a few thin slices cucumber
  • several slices pickled onion
  • a handful of sprouts (such as broccoli sprouts), rinsed and dried
  • a couple of small lettuce leaves (butter or romaine), rinsed and dried


Make the mayonnaise:

  1. In the bowl of a food processor, combine all ingredients except for the lemon juice (i.e., the basil, tarragon, chives, garlic, anchovies, lemon zest, salt, and mayonnaise) in the bowl of a food processor
  2. Puree smooth, about 2 minutes, scraping down the sides of the bowl as needed
  3. Blend in the lemon juice
  4. Chill until needed

Pickle the onions:

  1. In a medium-sized jar, combine the onions slices, vinegar, sugar, salt, and peppercorns
  2. Put the lid on the jar and let sit for at least 10 minutes, shaking a few times to dissolve the salt and sugar
  3. Use immediately or refrigerate until needed, up to 1 week

Assemble the sandwiches:

  1. Toast the bread and spread both slices with a thick layer of the mayonnaise
  2. Top with the avocado, mozzarella, tomato, cucumber, pickled onion, sprouts, and lettuce
  3. Sandwich with the other slice of bread and press down gently
  4. Optionally wrap the sandwich in parchment or secure with two toothpicks, and slice in half with a sharp serrated bread knife or chef’s knife
